Just threw together an eggplant, some red peppers, two shallots, a bunch of salt and pepper, chilli flakes and a can of San Marzano tomatoes I hand crushed. Over some rice made with cumin. Pretty damn good for something I made up as I went. Make rice. Shallots in first, cooked down. Add eggplant and peppers (diced), cook down until soft-ish. Add crushed San Marzano, two bay leaves, a little bit of Frank's (I like spicy) and simmer for at least 15min on med-low heat.
